- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup milk
- 1/4 cup melted butter
- 1/2 cup chopped pecans
- 1 teaspoon vanilla extract
- 1 1/2 cups hot water
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix pumpkin puree, milk, vanilla, and half the brown sugar. Add cinnamon, nutmeg, cloves, and salt. Pour into greased 8×8-inch dish.
- In a separate bowl, combine flour, granulated sugar, baking powder, and salt. Mix in melted butter to form a batter. Spoon batter over pumpkin mixture.
- Sprinkle chopped pecans over the batter. Mix remaining brown sugar with hot water and gently pour over the top without stirring.
- Bake for 40–45 minutes until the top is golden and the filling is bubbly. Let rest 10 minutes before serving.
- Serve warm with vanilla ice cream or whipped cream if desired.
Notes
- To enhance flavor, consider using fresh pumpkin instead of canned.
