Ingredients
- 4 cups fresh kale, chopped
- 2 medium Yukon Gold potatoes, diced (about 2 cups)
- 2 tbsp high-quality olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 8 oz chorizo or linguica sausage, sliced (or vegetarian substitute)
- Salt and pepper to taste
Instructions

Wash and chop the kale into bite-sized pieces. Dice the potatoes and onion into uniform cubes. Mince the garlic.

In a large pot over medium heat, add olive oil. Sauté the onion until translucent (about 5 minutes). Add garlic and cook until fragrant.

Stir in sausage and cook until browned (around 5 minutes).

Mix in diced potatoes and pour in vegetable broth. Bring to a gentle boil, then simmer until potatoes are fork-tender (about 15 minutes).

Fold in chopped kale and simmer for an additional 5-10 minutes until tender but vibrant.
