Description

A delicious creamy mushroom chicken served over your choice of noodles, rice, or mashed potatoes.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Slice chicken into thin strips and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and sauté chopped onions and sliced mushrooms until browned.
  4. Add minced garlic and cook for an additional minute.
  5. Sprinkle flour over the mushroom mixture and stir well.
  6. Gradually pour in chicken broth, stirring to avoid lumps. Bring to a simmer.
  7. Lower heat and mix in sour cream and Dijon mustard until smooth.
  8. Return the chicken to the skillet and simmer until heated through.
  9. Taste and adjust seasoning with salt and pepper.
  10. Garnish with chopped parsley and serve hot over noodles, rice, or mashed potatoes.

Notes

  • This dish goes well with a side of vegetables or a fresh salad.
  • For a lighter version, you can use Greek yogurt instead of sour cream.
