- 1 lb fresh catfish fillets
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornmeal (fine)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional)
- Vegetable oil for frying
Instructions
- Rinse catfish fillets under cold water and pat dry. Soak in buttermilk for at least 30 minutes.
- In a bowl, whisk together flour, cornmeal, salt, pepper, paprika, garlic powder, and cayenne.
- Heat vegetable oil in a skillet to 350°F (175°C).
- Remove fillets from buttermilk; let excess drip off. Dredge each fillet in the seasoned flour mixture.
- Fry the fillets for about 4-5 minutes on each side until golden brown and crispy.
- Drain on paper towels before serving hot with your favorite sides.
Notes
- This dish pairs well with coleslaw and cornbread.
- For extra flavor, marinate the catfish longer in buttermilk.
