Ingredients

- 4 cups chopped kale
- 2 cups cooked pasta (fusilli or penne)
- 1/2 cup Caesar dressing
- 1/2 cup freshly grated Parmesan cheese
- 1 cup halved cherry tomatoes
- 1 cup homemade croutons
- 2 tbsp freshly squeezed lemon juice
Instructions
- Begin by washing the kale thoroughly under cold water. Tear it into bite-sized pieces and set it aside.
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
- In a bowl, whisk together the Caesar dressing ingredients until smooth (or enhance store-bought dressing with extra lemon juice and garlic).
- In a large mixing bowl, combine kale, cooked pasta, cherry tomatoes, croutons, and grated Parmesan cheese. Drizzle with dressing and toss until evenly coated.
- Serve immediately on a platter or in individual bowls, garnished with extra Parmesan if desired.
Notes
- For extra flavor, add diced grilled chicken or shrimp.
- Store any leftovers in the refrigerator for up to 2 days.
