- 1 cup low-fat cottage cheese
- 4 large eggs
- 1 cup fresh spinach, chopped
- ½ cup bell peppers, finely chopped
- ½ cup shredded cheddar cheese
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together cottage cheese and eggs until smooth.
- Stir in spinach, bell peppers, cheddar cheese, salt, and pepper until well combined.
- Lightly grease a muffin tin with non-stick spray or olive oil.
- Pour the mixture into each muffin cup until three-quarters full.
- Bake for 20-25 minutes, or until golden brown and slightly puffed.
