Delicious homemade cornbread, perfect as a side dish or a snack.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 2 large eggs
- 1/4 cup melted butter (plus 1 tablespoon for skillet)
- 1 to 2 tablespoons sugar or honey (optional)
Instructions
- Preheat oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven while it preheats.
- In a large mixing bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, eggs, melted butter, and sugar or honey (if using).
- Pour wet ingredients into the dry ingredients and gently mix until just combined; do not overmix.
- Carefully remove hot skillet from oven and add 1 tablespoon butter. Swirl to coat.
- Pour batter into the hot skillet — it should sizzle on contact.
- Bake for 20–25 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool slightly before slicing. Serve warm.
Notes
- For a sweeter cornbread, increase the amount of sugar or honey.
- This cornbread pairs well with chili or soups.
