- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- Mini chocolate chips
- Crushed chocolate cookies
- Mini marshmallows
- Caramel drizzle
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with nonstick spray.
- In a medium mixing bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, mixing until combined. Stir in cocoa powder, flour, salt, and baking powder until you get a thick, glossy batter. Scoop about a tablespoon of brownie batter into each muffin cup to create a base layer.
- In a separate bowl, beat softened cream cheese with sugar until smooth and creamy. Add the egg and vanilla extract, mixing well. Spoon the cheesecake mixture over the brownie layer in each cup, filling each about 3/4 full.
- Sprinkle your favorite toppings generously. A mix of chocolate chips and crushed cookies is recommended for extra crunch and gooeyness.
- Bake for 20–24 minutes, or until the edges are set and the centers slightly jiggle. Cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Chill in the fridge for at least 1 hour before serving for best texture.
