Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable shortening (or more butter)
  • 1 1/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 tbsp cornstarch
  • 23 tbsp milk (as needed, for dough)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 1/2 cups powdered sugar (for frosting)
  • 23 tbsp heavy cream or milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Pink gel food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, salt, and cornstarch in a bowl.
  3. Beat the softened butter, shortening, and granulated sugar until light and fluffy, about 2–3 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Mix in the sour cream until smooth.
  6. Add the dry ingredients to the wet ingredients and mix just until combined. If the dough feels dry, add 1–3 tablespoons of milk, a little at a time. Cover and chill the dough for 45–60 minutes.
  7. Scoop 1 1/2–2 tablespoon portions and gently roll into balls. Place on the baking sheet and lightly flatten to a thick disk.
  8. Bake for 9–11 minutes, until the tops look set and the bottoms are just barely golden. Do not overbake. Cool on the pan for 5 minutes, then transfer to a rack to cool completely.
  9. Beat the butter until creamy. Add powdered sugar, vanilla, salt, and 2 tablespoons cream/milk. Beat until fluffy, adding more cream/milk as needed. Tint with pink gel coloring if desired.
  10. Spread frosting over fully cooled cookies and add sprinkles. Let the frosting set for 20–30 minutes before stacking.

Notes

  • For a richer flavor, feel free to replace the vegetable shortening with more butter.
  • Ensure the cookies are completely cooled before applying the frosting to prevent melting.
