This refreshing pineapple salsa is a perfect balance of sweet and spicy, ideal for serving with chips or as a topping for grilled meats.

- 2 cups fresh diced pineapple
- 1 small red onion, finely chopped
- 1 medium jalapeño pepper, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1–2 pieces chipotle peppers in adobo sauce, minced
- Salt, to taste
Instructions
- Start by peeling and dicing your fresh pineapple into small, bite-sized pieces. The riper, the better!
- Finely chop the red onion and seed/mince the jalapeño. If you’re using cilantro, give that a good chop too.
- In a large mixing bowl, combine the diced pineapple, chopped onion, minced jalapeño, and cilantro (if using).
- Squeeze lime juice over your mixture, then add the minced chipotle peppers.
- Sprinkle a pinch of salt over the mixture to enhance the flavors. Adjust the salt and lime juice to suit your taste.
- Gently stir the ingredients until everything is well combined. Cover the bowl and refrigerate for at least 30 minutes before serving.
Notes
- Adjust the heat of the salsa by adding more or fewer chipotle peppers.
- Pair this salsa with tortilla chips or serve it over grilled chicken or fish for a delicious meal.
