- 8 ounces mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 tablespoon Dijon mustard
- 2 cups chicken broth
- ½ cup sour cream
- ¼ cup heavy cream
- 2 tablespoons fresh parsley, chopped (for garnish)

Instructions
- Step 1: Sear the Chicken
In a large skillet or sauté pan, heat olive oil over medium-high heat. Season chicken strips with salt and pepper, then add to the pan in a single layer. Sear until golden brown on both sides and cooked through—about 5–6 minutes. Remove and set aside. - Step 2: Sauté Aromatics and Mushrooms
In the same pan, add a little more oil if needed. Toss in the chopped onion and cook until softened, about 3 minutes. Add the garlic, smoked paprika, and thyme, stirring for another 30 seconds until fragrant. Add the sliced mushrooms and sauté for 5–7 minutes, letting them release their juices and brown a bit for a deeper flavor. - Step 3: Make the Sauce
Sprinkle the flour over the mushroom mixture and stir to coat. Cook for 1 minute to eliminate the raw flour taste. Stir in the Dijon mustard, then slowly pour in the chicken broth while whisking to avoid lumps. Let it simmer for 3–4 minutes until it starts to thicken. - Step 4: Bring It All Together
Lower the heat to medium. Stir in the sour cream and heavy cream, blending until the sauce is smooth and velvety. Return the cooked chicken to the pan, nestling it into the sauce. Simmer for another 5 minutes to meld the flavors and heat the chicken through. - Step 5: Serve and Enjoy
Serve your rich chicken stroganoff over warm egg noodles, mashed potatoes, or fluffy rice. Finish with a sprinkle of fresh parsley for a burst of color and freshness.
