Cilantro Lime Chicken Bowl

Description

A delicious and fresh cilantro lime chicken bowl with corn, rice, avocado, and a creamy chipotle aioli.


Ingredients

Scale
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups corn (off the cob)
  • 1 tablespoon butter
  • 1/3 cup green onion
  • 23 tablespoons mayo
  • 23 tablespoons greek yogurt
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/3 cup cotija cheese
  • 2 cups cilantro lime rice (or white rice)
  • 1 avocado
  • 1/2 cup sliced red onion
  • 1/2 cup fresh cilantro
  • 1 batch chipotle aioli (click for recipe)

Instructions

  1. In a small bowl, mix together all ingredients for the chicken rub and rub on all chicken thighs. Place on a baking sheet lined with parchment paper and set aside.
  2. Preheat the oven to 425 degrees Fahrenheit.
  3. Bake the chicken for 30 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
  4. Meanwhile, melt the butter in a skillet over medium heat and add the corn. Saute for about 5 minutes or until it starts to brown. Transfer to a mixing bowl.
  5. Add in all remaining ingredients and mix well to combine. Taste and adjust flavors as desired.
  6. When the chicken is done, let cool for 5 minutes, then slice into strips. Assemble your bowls with a base of rice, then add on the corn, chicken, cilantro, onion, and cilantro lime crema.

Notes

  • Feel free to adjust the spice level by adding more or less chili powder.
  • This dish can be made with shredded chicken for a different texture.
  • Serve with additional lime wedges for extra flavor.
