Description

Delicious grilled chicken ciabatta sandwiches with fresh ingredients.


Ingredients

Scale
  • 2 medium boneless, skinless chicken breasts
  • 4 ciabatta rolls, sliced
  • 4 tablespoons basil pesto
  • 4 slices mozzarella cheese
  • 1 large tomato, sliced
  • 1 cup fresh baby spinach leaves
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat a grill pan or skillet over medium-high heat. Rub chicken breasts with olive oil, salt, and black pepper.
  2. Grill the chicken breasts for 4-5 minutes per side or until fully cooked. Let rest for 5 minutes, then slice thinly.
  3. Lightly toast the ciabatta rolls. Spread 1 tablespoon of basil pesto on the bottom half of each roll.
  4. Layer sliced chicken, mozzarella cheese, tomato, and baby spinach on top of the pesto. Cover with the top half of the roll.
  5. Optionally, return the assembled sandwiches to the grill or pan for 1-2 minutes to melt the cheese before serving.
