Description

A delicious and healthy garlic lemon chicken dish served with sautéed spinach.


Ingredients

  • 2 pieces chicken breasts (skinless and boneless)
  • 4 cups fresh spinach (baby spinach preferred)
  • 2 tablespoons olive oil (extra virgin)
  • 2 cloves garlic (minced)
  • 1 lemon lemon juice (freshly squeezed)
  • to taste salt
  • to taste freshly cracked black pepper
  • 1/4 cup feta cheese (optional toppings such as nuts, seeds, or fresh herbs)

Instructions

  1. Season chicken breasts with salt, pepper, and a drizzle of olive oil.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Add chicken breasts and cook for 6–7 minutes per side, until fully cooked and golden.
  4. Remove chicken and let it rest for a few minutes before slicing.
  5. In the same skillet, add garlic and cook for about 30 seconds until fragrant.
  6. Add spinach and sauté until wilted, adding a splash of lemon juice.
  7. Slice chicken into strips and assemble into meal prep containers.
  8. Top with sautéed spinach and any optional toppings (feta, nuts, seeds, or herbs).
  9. Drizzle with remaining lemon juice before serving.

Notes

  • This dish is excellent for meal prep and can be stored in the refrigerator for a few days.
