Description

Delicious mini brownies topped with toasted marshmallows, perfect for a sweet treat.


Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 24 mini marshmallows

Instructions

  1. In a medium bowl, melt 1/2 cup unsalted butter until just melted. Let it cool slightly.
  2. Whisk in 1/2 cup granulated sugar and 1/4 cup brown sugar until smooth.
  3. Add 1 large egg and 1 teaspoon vanilla extract. Whisk until fully combined.
  4. Sift in 1/3 cup unsweetened cocoa powder, 1/2 cup all-purpose flour, and 1/4 teaspoon salt. Stir just until combined.
  5. Fold in 1/2 cup mini chocolate chips.
  6. Preheat oven to 350°F (175°C) and grease a 24-cup mini muffin pan. Divide the batter evenly (about 1 tablespoon per cup).
  7. Bake for 10-12 minutes or until tops are set.
  8. Remove pan from oven and gently press one mini marshmallow onto each brownie.
  9. Broil for 1-2 minutes until marshmallows are toasted. Watch carefully!
  10. Let cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • These brownies are best served fresh but can be stored in an airtight container for up to 3 days.
  • For an extra touch, drizzle with chocolate sauce before serving.
