Description

This delightful dessert features a sponge cake soaked in three kinds of milk and topped with fresh mango cream.


Ingredients

  • 5 large eggs (separated at room temperature)
  • 1 cup white granulated sugar (divided)
  • 1 teaspoon vanilla extract
  • 0 cup whole milk (at room temperature)
  • 1 cup all purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 0 teaspoon salt
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 0 cup heavy whipping cream
  • 1 cup heavy whipping cream (cold)
  • 0 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 0 cup mango puree (plus more for drizzling on top)
  • 1 medium fresh mango (peeled and cut into small chunks)

Instructions

  1. Preheat your oven to 350℉. Grease only the bottom of a 9×13 inch baking dish with non-stick spray.
  2. Whisk together the flour, salt, and baking powder in a bowl. Set it aside.
  3. Beat the egg yolks, ¾ cup sugar, and vanilla extract until thick and pale yellow. Stir in the milk.
  4. Fold the flour mixture gently into the egg yolk mixture until just combined.
  5. Beat the egg whites until soft peaks form. Gradually add the remaining ¼ cup of sugar.
  6. Gently fold in half the beaten egg whites into the batter, then the remaining egg whites.
  7. Pour the cake batter into the prepared baking dish and spread it evenly. Bake for 25 minutes or until a toothpick comes out clean.
  8. Whisk together the evaporated milk, sweetened condensed milk, and heavy cream.
  9. Poke holes in the cooled cake with a fork and pour the soaking mixture over the cake.
  10. Cover and refrigerate for at least 4 hours or overnight.
  11. Beat the heavy whipping cream, sugar, and vanilla extract until stiff peaks form. Fold in the mango pulp.
  12. Spread the mango whipped cream over the cake and top with fresh mango chunks and mango puree.
  13. Slice and enjoy this delightful dessert!
