Description
This delightful dessert features a sponge cake soaked in three kinds of milk and topped with fresh mango cream.

- 5 large eggs (separated at room temperature)
- 1 cup white granulated sugar (divided)
- 1 teaspoon vanilla extract
- 0 cup whole milk (at room temperature)
- 1 cup all purpose flour (spooned and leveled)
- 1 teaspoon baking powder
- 0 teaspoon salt
- 14 oz sweetened condensed milk
- 12 oz evaporated milk
- 0 cup heavy whipping cream
- 1 cup heavy whipping cream (cold)
- 0 cup powdered sugar
- 1 teaspoon vanilla extract
- 0 cup mango puree (plus more for drizzling on top)
- 1 medium fresh mango (peeled and cut into small chunks)
Instructions
- Preheat your oven to 350℉. Grease only the bottom of a 9×13 inch baking dish with non-stick spray.
- Whisk together the flour, salt, and baking powder in a bowl. Set it aside.
- Beat the egg yolks, ¾ cup sugar, and vanilla extract until thick and pale yellow. Stir in the milk.
- Fold the flour mixture gently into the egg yolk mixture until just combined.
- Beat the egg whites until soft peaks form. Gradually add the remaining ¼ cup of sugar.
- Gently fold in half the beaten egg whites into the batter, then the remaining egg whites.
- Pour the cake batter into the prepared baking dish and spread it evenly. Bake for 25 minutes or until a toothpick comes out clean.
- Whisk together the evaporated milk, sweetened condensed milk, and heavy cream.
- Poke holes in the cooled cake with a fork and pour the soaking mixture over the cake.
- Cover and refrigerate for at least 4 hours or overnight.
- Beat the heavy whipping cream, sugar, and vanilla extract until stiff peaks form. Fold in the mango pulp.
- Spread the mango whipped cream over the cake and top with fresh mango chunks and mango puree.
- Slice and enjoy this delightful dessert!

- This recipe can be prepared a day in advance for better flavor.
- Use ripe mangoes for the best taste.
