- 1 pound ground beef
- 2 teaspoons garlic, (minced)
- ¼ cup (60 g) tomato paste
- 2 cups (16 ounces / 480 g) chicken broth
- 1 cup (238 g) heavy whipping cream
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon red pepper flakes, (or more or less to taste)
- 8 ounces cavatappi pasta, (uncooked)
- Fresh parsley, (for garnish)
- Parmesan cheese, (finely grated, for garnish)
Instructions
- To a large, heavy-bottomed pot or Dutch oven over medium heat, add the ground beef. Cook for 6 to 8 minutes, or until fully browned, breaking it up with a wooden spoon as it cooks. If needed, drain excess grease.
- Stir in the minced garlic and cook for 1 more minute.
- Reduce the heat to medium. Add the tomato paste, chicken broth, heavy cream, salt, pepper, and red pepper flakes. Stir well until the mixture is smooth and fully combined.
- Stir in the uncooked cavatappi pasta, making sure it’s fully submerged in the liquid. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Cover the pot with a lid and simmer for 14 to 17 minutes, stirring occasionally to prevent sticking.
- Garnish with chopped fresh parsley and parmesan. Serve hot.
