- 2 ½ cups coarsely crushed pretzels
- ⅔ cup brown sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- ¾ cup melted butter
- 3 cups fresh blackberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 8 ounces cream cheese, room temperature
- 8 ounces extra creamy cool whip
- 1 cup powdered sugar
Instructions
- Preheat the oven to 375°F and spray a 9×13 baking dish with non-stick cooking spray.
- For the Pretzel Crust: In a large bowl, mix crushed pretzels, brown sugar, flour, and vanilla. Stir in melted butter until combined. Press into the baking dish, reserving ½ cup for topping. Bake for 10 minutes, then let cool completely.
- For the Blackberry Topping: Combine blackberries, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, then cool.
- For the Cream Cheese Mixture: Beat cream cheese until fluffy. Mix in powdered sugar, then gently fold in cool whip. Spread the cream cheese mixture over the cooled crust. Top with blackberry mixture. Sprinkle with reserved pretzel bits.
