Description
Delicious sautéed chicken thighs served with fresh spinach and a zesty lemon flavor.
Ingredients

- 4 pieces chicken thighs (bone-in, skin-on)
- 4 cups fresh spinach (washed and drained)
- 3 cloves garlic (finely minced)
- 1 whole lemon (zested and juiced)
- 2 tablespoons extra-virgin olive oil
- to taste sea salt
- to taste freshly cracked black pepper
- pinch chili flakes (optional)
Instructions
- Season the chicken thighs with salt, pepper, and chili flakes (if using).
- Heat olive oil in a large skillet over medium heat.
- Place chicken thighs skin-side down and sear for 6-7 minutes until golden brown.
- Flip chicken and cook for another 6-7 minutes until fully cooked.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Add spinach and cook until wilted, stirring occasionally.
- Stir in lemon juice and zest, adjusting seasoning with salt and pepper.
- Return chicken to the skillet and toss to combine with spinach and garlic.
- Serve warm.
Notes
- For a little extra heat, consider increasing the chili flakes.
- This dish pairs well with crusty bread to soak up the juices.
